    1/2 cup fresh mint leaves, finely chopped
    1 cup white vinegar
    2 T brown sugar


Simmer vinegar. Add finely chopped mint and sugar. Simmer for 20 minutes to infuse. Transfer to sterilised jars for extended storage.
