Ingredients

    8 Salmon Filets
    4 tbs Canola Oil
    2 tbs Lemon Juice
    4 oz 2% Cottage Cheese (Small Curd)
    1 Egg
    1/2 cup Parmesan Cheese
    6 oz Baby Spinach Leaves

Directions

Saute Spinach in 2 tbs oil
Mix egg, cottage cheese and parmesean cheese together
Add spinach to cheese mixture

In a 9x13 cooking dish place salmon drizzle with remaining oil and lemon juice. Cover each filet with cheese and spinach mixture. Cook for 20 minutes uncovered in 375 oven
