A low cal, high nutrition way to make squash that even my husband loves! A low cal, high nutrition way to make squash that even my husband loves!
Number of Servings: 6


    *Extra Light Olive Oil, 1 tbsp
    *whole onion, raw (1 onion),
    Crushed Tomatoes, 800 grams (lg can)
    Summer squash, 2 small
    Zucchini, 2.5 cup, sliced
    Oregano--2 to 4 TBSP to taste
    Ground pepper
    Garlic powder--about 1/2 tsp to taste


Sautee the onion in olive oil, add tomatoes and cook on med-high temp in lg sautee pan. Add seasonings and stir in. Slice squash and zucchini, add to mixture and cook until softened.
