Number of Servings: 4


    1 boneless, skinless chicken breast
    1/4 cup chopped yellow peppers
    1/4 cup chopped red peppers
    1 jalapeno pepper, chopped
    1/4 cup chopped onion
    1/2 cup of monterey cheese
    1 cup brown rice
    1 tbsp olive oil
    2 tbsp lime juice
    Fresh cilantro (as desired)


Preheat oven to 375. Also, place water for rice on burner on medium heat to bring to boil for rice.

Season the chicken breast with fajita seasoning and bake in the over for 20 to 25 minutes. While the chicken is baking, prepare rice and sautee vegetables in olive oil. To finish preparing rice, mix lime juice and cilantro in and let sit on burner for a few minutes before serving.

Once chicken has been allowed to cool, cut into cubes. Place chicken and vegetables on top of rice and serve.
