    * 1/2 cup egg substitute
    * 4 large egg whites
    * 1/4 cup fat free plain yogurt
    * 1/2 cup cauliflower puree
    * 2 tbsp grated Parmesan
    * Pinch of salt
    * Nonstick cooking spray


* In a large bowl, whisk together the eggs, egg whites, sour cream, cauliflower puree, Parmesan, and salt.
* Coat a large nonstick skillet with cooking spray, then set the pan over medium-high heat. When the pan is hot, add the egg mixture and reduce the heat to low. Cook, stirring frequently with a silicone spatula, until the eggs are scrambled - firm but nice and moist - 2 to 3 minutes.

    Ok, I admit it, I used whole eggs. And I was scared about the cauliflower. I decided to make this because I had leftover cauli I wanted to use, but really was craving eggs. Its really really good! Wow, tastes so cheesey, even tho there is only a little bit in there. - 1/5/08
