    Vegetable cooking spray
    1 tsp olive oil
    2 cloves garlic, minced
    8 oz chicken breast meat, boned, skinless
    1/2 cup frozen green peas, thawed
    1/3 cup coarsely shredded carrots
    1/2 cup low sodium chicken broth
    2 tbs light cream cheese
    2 cups cooked bow-tie pasta
    3 tbs grated Parmesan cheese
    1/2 tsp grated lemon rind
    Juice of a lemon
    1/8 tsp salt
    1/8 tsp ground black pepper


Cut chicken into 1/4" wide strips; set aside. Coat a large non-stick skillet with vegetable spray; add oil. Place over medium-high heat until hot. Add garlic; saute about 15 seconds. Add chicken; saute 5 minute. Add peas and carrots; saute 1 minute. Remove from skillet; set aside. Add broth and cream cheese to skillet; cook 3 minutes or until cheese melts, stirring constantly with a whisk. Stir in chicken mixture, pasta, Parmesan, lemon rind, lemon juice, salt, and pepper. Cook 1 minute. Serves 3.
