I use a large skillet that is oven proof. I use a large skillet that is oven proof.
Number of Servings: 8


    * Egg, fresh, 6 large
    * *Potato, raw, 4 medium (2-1/4" to 3-1/4" dia.)(peeled and chopped)
    * Cabbage, fresh, 2 cup, chopped
    * Bacon, 6 medium slices, cooked (raw product
    * Onions, raw, .3 cup, chopped (remove)
    * *Sargento 6 Cheese Italian Cheese Blend, shredded cheese, 1 cup (remove)
    * Cheddar Cheese, .25 cup, shredded
    * *Peppers, sweet, red, roasted or fresh, 1 cup, sliced
    * Heavy Whipping Cream, .5 cup, whipped
    * Sriracha chili sauce, 2 tsp (remove)
    Salt and pepper to taste
    ** Olive oil or coconut oil for pan - 1 tsp


Chop 6 slices of bacon and saute in pan.
Remove bacon from pan when brown and crispy.
In the same pan, add the olive oil to the existing bacon grease and saute the potatoes until golden. (about 5 minutes)
Then add the chopped cabbage and chopped onions. Cook for an additional minute.
Set aside.
In a separate bowl mix the eggs, sriracha, and heavy cream until well blended.
Add the egg mixture to the pan, top with cheese (feel free to substitute your cheese of choice here) and top with slices of the red pepper.
Bake in the oven 350 degrees for about 15 minutes.
Optional - finish off under the broiler to brown and puff up .
Cut into wedges and enjoy.
Terrific with sour cream and additional sriracha sauce
