    1 1/2 pounds of ground venison
    1/2 bag of red beans soaked overnight
    1 large yellow onion
    2 T emerils southwest essence
    2 cans of diced tomatoes (no salt added)


prep your red beans the day before to soak, brown venison, add onions to saute, add spices and tomatoes and a can or two of water depending on how "soupy" you like it. add some garlic if you like. simmer one hour until the beans are soft.
