    Olive oil, 2 Tbsp
    Beef - cubed, 16 oz
    1 onion, raw
    1 cup celery, raw
    1 cup carrot, raw
    1 cup zucchini, raw
    1 cup mushrooms, raw
    jalapeno pepper, 1/4 cup
    garlic minced, 3 tsp
    ginger root, minced 3 tsp
    2 Tbsp olive oil


Brown cubed beef in 2 Tbsp oil. Add all ingredients to crock pot and cook until tender - around 6 hours.

Serve over lentils
