    6 Qts Water
    1 Onions diced
    7-8 Chicken (thigh meat - no bones/skin)
    3-4 Carrots diced
    3-4 Celery stalks diced
    1/2 Cup White rice
    0.5 Tsp each Salt/Pepper
    0.5 Tsp Dry crushed oregano/dry thyme leaves (to taste)
    1-2 Tbsp Garlic powder (to taste)
    **Add other veggies diced too: Zucchini, Cabbage, Broccoli, Bell Peppers, Whole kernal corn, Frozen/Fresh Peas- Enjoy!


Soup makes 16 - 1 cup servings.
Boil water first- place into boiling water the chicken meat and reduce heat. Simmer for 20-30 minutes until chicken begins to turn white. Add seasoning. Stir occasionaly. Add onions, carrots & celery. Stir occasionally. Continue to simmer for 20 minutes, add rice and cook until tender. Stir occasionally. Enjoy!
