Introduction

Ingredients

1/2 C Oats
2 C Silk soymilk
1 small Sweet potato
1 large banana
2 T ground flax
1 t Cinnamon, ground
1 t Vanilla Extract
dash of Salt
2 T Pancake Syrup
1/3 C Walnuts, chopped
2 T Earth Balance Natural Buttery Spread
2 T Whole Wheat Flour
1/4 C Brown Sugar
Directions
1. Peal and chop the sweet potato and boil about 10 minutes or until soft.
2. Combine oats, milk, flax in pot and bring to boil. Reduce to low-medium heat and cook ~5-7 minutes more, stirring frequently.
3. Mash the potato and banana into the oat mix. Stir in cinnamon, syrup, salt, and vanilla. Pour into an 8x8 pan.
4. Make the topping by mixing together the nuts, flour, butter, and brown sugar. Sprinkle over top of the oat mix.
5. Bake uncovered for 20 minutes @ 350. Then set oven to broil and let it go for a couple more minutes until toasted on top.
