    1 head Cauliflower
    1 cup Whole Wheat Macaroni (or penne)
    2 1/2 C Chicken (or veg) Stock
    6 wedges of Laughing Cow Light Swiss Cheese
    1 Tbsp olive oil
    1 Tbsp Dijon
    Salt & Pepper (and/or other seasonings to taste (i.e. 1 tsp ea.)
    1/4 C Parmesan cheese (grated or shredded)
    25 Reduced Fat (or Whole Wheat) Ritz Crackers, crushed


Heat oven to 400F. Boil a pot of salted water. Cook cauliflower in water for 25 min. Put in food processor and let cool while cooking pasta. Cook pasta in boiling water and cook for 5 minutes (about 7 if using penne). Drain and rinse to cool. Put pasta in a greased 9-inch casserole. Add Laughing Cow, oil, mustard and seasonings to cauliflower and process until combine (in batches if necessary). Pour sauce over pasta and toss. Top with parmesan and cracker crumbs. Bake 20 minutes or until bubbly and/or crackers appear toasted.
