Introduction

High-Protein, low-cal, and delicious! High-Protein, low-cal, and delicious!
Number of Servings: 6

Ingredients

    2 tbls. Canola Oil
    1 medium onion, thinly sliced
    1 clove garlic
    Morningstar Farms "Bacon" strips (2) - Diced
    3 stalks celery, chopped
    400 g. Mushrooms (any mix - I like Portabello and Crimini)
    bay leaf
    8 c. water
    Salt & Pepper to taste
    1 can Navy Beans (14oz.), drained and rinsed
    4 cups fresh or frozen spinach


Directions

Brown onions, "bacon," celery and garlic in canola oil in large soup pot. Continue to brown until onions are carmelized (caramel brown, sweet and wilted). Add mushrooms and saute until mushrooms release their liquids.
Add water, salt, pepper and bay leaf. Simmer for 10 minutes. Add beans to heat through. Throw in spinach right before serving.

Serve over brown rice if desired (not included in nutritional info).

Yields 6 hearty portions (approx. 2c. each)

    This is pretty good, but is pretty weak in the flavor department. I think I'll try this again, but use vegetarian broth instead of water, and maybe add some more "bacon" for a smokier flavor. - 12/20/17

    I didn't make it as I cannot eat beans but it looks so delicious and nutritious. I plan to share this reciepe with my friends. - 10/16/07
