    1 box yellow cake mix
    1/4 cup extra virgin olive oil
    1/4 cup Egg Beaters
    1/3 cup coconut milk
    3 Tbsp white chocolate chips


Mix together cake mix, olive oil, and Egg Beaters in bowl. Mix coconut milk in slowly so that batter remains as dense as possible. Then mix in white chocolate chunks.

Spray an 8x8 brownie pan with non-stick cooking spray. Pour in mixture and spread evenly. Pop in oven preheated to 350 degrees. Bake for 25-30 minutes (edges will be golden brown) depending on how "done" you like your blondies. I prefer mine gooey- between 25 minutes is perfect.
