    *eggbeater's (southwestern style) 1 cup
    *skim milk 1 cup
    *2% Mild Cheddar Cheese 1.5 cup
    *Ore Ida Potatoes O Brien 1/2 bag (about 3.5 cups)
    *precooked bacon 9 slices
    salt & pepper to taste


Preheat to 350
spray square baking dish
put potatoes in bottom, microwave to thaw
combine eggs & milk, pour over potatoes
microwave bacon and crumble,
sprinkle over eggs with one cup of cheese and salt & pepper
mix to combine
top with 1/2 cup of cheese
Cover with foil & bake at 350 for 45 min
Then remove foil and bake another 30-40 min, until eggs are set
