    Makes one.
    1/4 cup flax meal
    1/2 tsp. baking soda
    1 packet of splenda-I use a tsp.
    1 tsp. cinnamon
    1 egg or equivalent substitute
    1 tsp. butter or margarine


place all dry ingredients in a cup and mix well add egg and butter mix well,,,, microwave for 1 minute, run knife around muffin and butter it... good to go with jam or jelly or just butter...

  • This was a lot better than I imagined before making it. I did use I T sugar in place of artificial sweetener and I used coconut oil in place of butter. Will try with butter next time. Just not big on coconut. I ate at 6:30 and wasn't hungry again til almost 11am so kept me full 4 awhile. :) - 7/6/12
