Ingredients

    Flour, white, 1.5 cup
    Baking Powder, 1 tsp
    Baking Soda, 1 tsp
    Salt, .5 tsp
    Banana, fresh, 3 large
    Egg white, 2 serving
    Compliments Balance Unsweetened Apple Sauce, .33 cup
    Honey, .75 cup
    Strawberries, fresh, .5 cup, sliced
    Blueberries, fresh, .5 cup

Directions

Preheat oven to 350 degrees F (175 degrees C).

Coat muffin pans with non-stick spray, or use paper liners.

Sift together the flour, baking powder, baking soda, and salt; set aside.

Combine bananas, honey, egg whites, and apple sauce in a large bowl. Fold in flour mixture, and then add berries and mix until smooth. Scoop into prepared muffin pans.

Bake in preheated oven. Bake for approximately 18-20 mins.

Test with toothpicks - should come out clean once muffins are done. Alternately, muffins should "spring back" when you lightly tap them.

    Oops! Just updated it... berries should be mixed in to the muffin mixture.
