Ingredients

    * Chicken Breast, no skin, 8 breast, bone and skin removed
    * Parmesan Cheese, shredded, 32tbsp = 2c.
    * Mozzarella Cheese, part skim milk, shredded 8 oz
    * Crushed Tomatoes, 907 grams = 32 oz
    * Bread crumbs, dry, grated, seasoned, 1 cup
    1/2 tsp of Italian seasoning
    Salt and pepper to taste

Directions

Coat chicken in bread crumbs. Pour tomatoes into casserole dish. Sprinkle in spices and stir. Lay breasts in sauce, Mix the two cheeses and sprinkle on top. Cook - covered for 30 min. or until chicken is done and tender.

Serving Size: 8 - 1/2 breast each
