    4 boneless chicken breasts, skin removed
    2 oz shredded mozzarella cheese
    1/2 cup ricotta cheese
    1/2 cup frozen spinach, chopped & thawed
    1 egg white, beaten (optional)
    1 tbsp garlic, minced (jarred is good)
    1 tsp black or white ground pepper
    1 tsp onion powder
    1 tsp salt


Preheat oven to 350 degrees.

Pound out boneless chicken breasts until uniform thickness. Sprinkle evenly with salt, pepper and onion powder. Mix cheeses and spinach well, set aside. If desired add 1 beaten egg white for firmer texture.

Carefully place 1/4 of cheese mixture at one end of chicken breast and roll up, tucking in sides. Place seam side down on baking sheet (spray with nonstick spray if desired).

Spray tops of chicken with nonstick spray to prevent drying, bake for 45-60 minutes or until golden brown and cheese begins to ooze. Remove from heat and let set covered for 10 minutes before serving.
