Introduction

Ingredients

    Crepes:

    1 1/2 cup nonfat milk
    2 eggs
    2 Tbsp. Olive Oil
    1 cup four

    Filling:

    3 medium or 2 large Granny Smith Apples
    1 tsp. cinnamon
    1/4 cup water
    5 tsp unpacked brown sugar
    1/2 cup rolled oats

    Syrup:

    1/3 cup packed brown sugar
    1/3 cup water
    1 tsp vanilla

Directions

Crepes:

Place milk, eggs, oil, and flour into blender and blend until flour is dissolved.

Heat 6" skillet over medium high heat. Pour 2 to 3 Tbsp. of batter into pan and cook for 30 seconds on each side or until crepe is dry. Place cooked crepes in warmed oven until all batter has been cooked.

Filling:

While crepes are being cooked, peel & chop apples into bite size chunks. Combine apples, water, cinnamon and brown sugar in a medium size sauce pan. Cook & stir over medium heat until apples are soft. There should be liquid in the pan. Add oats and stir well. Cover and let stand for 5 minutes.

For Syrup:

Transfer apple & oat mixture to a bowl. In the same saucepan, combine brown sugar and water and bring to a boil over high heat. Boil for 1 minute. Let stand.


To prepare crepes:

Place crepe on plate and place 1/4 cup apple & oat mixture in the center of the crepe. Roll the crepe around the filling, placing seam side down on the plate. Top with 1 Tbsp. Brown sugar syrup.

2 filled crepes w/syrup = 1 serving

I always serve a protein, like cottage cheese, turkey ham or turkey bacon and fresh fruit when serving this as a breakfast entre.
