Introduction
This requires some minor prep in a saute pan before you throw everything in the crock pot, but I think it's worth the effort. It's also a rather salty dish, so I don't eat this very often, but it's good occasionally, and it would have a lot less sodium if you use a low sodium chicken broth and/or low sodium sausage if you can find it. Gumbo is one of those things that most people just DO and don't really follow a recipe for, so I did my best here, but don't be afraid to make alterations. This recipe is also great with shrimp. Serve over brown rice with some corn bread or a fresh salad, whatever your calorie allotment allows you! Ingredients

3/4 - 1 pound chicken breasts, cooked
1 large red bell pepper, chopped
1 large onion, chopped
2 stalks celery, diced
chicken broth, 4-5 cups (depends on how thick you like it)
2 tbsp unsalted butter
2 tbsp white all purpose flour
6 oz Andouille sausage (or Italian sausage if you can't find it)
5 garlic cloves, peeled and minced
3 tbsp low sodium Cajun seasoning
Directions
1. In a large saute pan, melt the butter over medium-high heat.
2. Sprinkle in the flour and cook until the mixture takes on a darker brown hue, stirring constantly (about 5-10 minutes).
3. Add the onion, celery, and bell pepper and cook for 5 more minutes.
4. Add the garlic and the cajun seasoning and cook for an additional 1-2 minutes.
5. Put this mixture into a 3-4 quart crock pot along with the rest of your ingredients. You can brown the sausage and/or chicken in the saute pan with some nonstick cooking spray if you'd like, but it's not mandatory.
6. Cook on high for 4-5 hours or low for 8-10.
7. Put brown rice in the bottom of your serving bowls, and ladle the gumbo over the top.
8. Enjoy!
