    1 1/4 C. flour
    1 T. baking powder
    1/2 t. salt
    1/2 t. cinnamon

    1/4 t. nutmeg
    1 1/2 cups bran flakes
    3/4 c. skim milk
    1/2 cups firmly packed brown sugar
    2 egg whites
    1/4 c. canola oil
    1/2 t. vanilla
    1/2 c. diced walnuts


Stir the 1 1/4 cups flour, baking powder, salt & spices. Set aside. In large mixing bowl, combine bran flakes cereal and milk. Let stand for 3 minutes. Add the sugar, egg whites, oil, vanilla & nuts. Mix well. Add flour mixture, stirring only until combined. Portion batter evenly in 12 muffin tins coated with cooking spray. Bake at 400 degrees about 20 minutes.

Serving Size: Makes 12 muffins.
