Introduction

A yummy mexican lasagna style casserole with corn tortillas and chicken. A yummy mexican lasagna style casserole with corn tortillas and chicken.

Ingredients

    16 ounce jar green salsa
    12 ounce jar red salsa
    1 cup Sour cream
    2 cups chicken stock/broth
    2 cups shredded mexican cheese (or cheddar)
    4 boneless skinless chicken breast halves
    12 - 6" corn tortillas
    1 onion (sliced thinly)
    1 bunch fresh cilantro
    salt, pepper and cumin to taste

Directions

season chicken breasts with salt and pepper then boil until cooked and tender in chicken stock. While cooling, mix both salsas, sour cream, sliced onion and chopped bunch of cilantro in large mixing bowl. Shred chicken (save stock for later in pan) and add to mix, stir thoroughly and add salt, pepper and cumin to taste if desired. Cut tortillas into quarters and dip in chicken stock to soften slightly before layering into lightly sprayed 9 x 13 casserole pan. Put one layer corn tortillas then the chicken/salsa mix then cheese and repeat (3 layers) with final top layer being cheese. Bake for 30 minutes in 350 degree oven and serve - Yum!
