Introduction

A very tasty vegetarian meatloaf. Nice served with gravy and mashed potatoes. Becomes firm when it cools. Leftovers make a wonderful sandwich filling! Just add mustard or mayo. Ingredients

    Lentil Roast
    Simmer together about one hour till very tender;
    - 1 cup uncooked lentils ( rinse)
    - 2& 1/2 c. water
    - 1 t. thyme
    - 3 large cloves garlic minced
    Remove from heat, drain any remaining water ( won't be much if any) and add;
    - 1/2 c. chopped pecans
    - 1 T. flax meal
    - 2 c. soy milk
    - 1/4c. olive oil
    - 1 t. sage
    - 1 t. onion powder
    - 1 t. celery salt
    - add Bragg's liquid amino or just salt to taste

Directions

Mix all and scrape into a 9x9 glass pan. Bake at 350 for 45 minutes to an hour. It will set firmer once it sits for about 15 minutes.
