    3 leg quarters, boiled until done
    2 T canola oil
    1 egg
    3/8 c cornstartch, divided
    1/2 c sugar
    1/2 c vinegar
    1 can pineapple


cut up chicken, dip pieces in egg, coat w/ cornstarch using 1/4 c. Brown in oil in large skillet. Drain.
Drain pineapple, saving juice. Cut up pineapple in bite sized pieces if not crushed. Add water to juice to made 1 cup, bring to boil in skillet. Mix sugar and remaining 2 T cornstarch and stir into boiling juice to thicken, cook 1 min.
Add soy sauce, pineapple, and chicken, heat through.
Serve over rice.
