Number of Servings: 6


    - 1 T of Extra Virgin Olive Oil
    - 1/2 cup of diced Onion
    ~2 c of chopped spinach
    - 1/4 c of diced mushrooms
    - 2 Large Eggs
    - 4 Egg Whites
    - 1/2 c Oat Flour
    - 1/2 t Baking Powder
    - 1/4 t of salt
    - Pepper to taste
    - 1 1/3 c of Low fat Milk
    - 1/2 c low fat cheddar cheese
    - 1/4 cup diced zuccchini
    - 1/4 cup diced red peppers


Serving Size: Makes 6 servings


In a medium saucepan over medium heat, cook the Olive Oil and Onion until the onions become translucent. Add the zucchini and peppers and saute for approximately 10 minutes. Add the mushrooms and spinach and cook until the spinach wilts. Set aside.

In a mixing bowl, whisk together: eggs, flour, baking powder, salt and pepper. Whisk in milk and then stir in the cooked vegetables. Pour into a greased pie or tart pan. Top by sprinkling the cheddar cheese. Bake for 30 minutes at 400 F.
