    2 lbs Ground Skinless Turkey Breast
    8 slices whole wheat bread crumbled
    1/2 cup chopped parsley
    1 Egg
    1 tsp dried thyme
    1 tsp salt
    1/4 tsp pepper
    2 cups fresh salsa (reserve 1/2 cup)
    1 tbsp Vegetable Oil
    1 cp finely chopped Onion
    1 cp finely chopped Celery
    1 cp finely chopped Red Bell Pepper
    2 cloves minced Garlic


Preheat oven to 350. Heat oil in a 12-inch skillet and add celery, onion, red bell pepper and garlic. Cook, stirring occasionally, over medium heat until tender, about 5 minutes. In a large bowl, combine ground turkey, bread crumbs, parsley, egg, thyme, salt, pepper, cooked vegetables and salsa, and mix well.

Shape mixture into a loaf and place in a 13x9 inch baking pan. Make small "valley" across the length of the top of the loaf and fill with resesrved 1/2 cup salsa. Back 1 hour 15 minutes, or until firm. Let stand 5 minutes before slicing.

Makes 8 servings.
