This is always a crowd pleaser and very quick and easy to make. Reheats well. This is always a crowd pleaser and very quick and easy to make. Reheats well.
Number of Servings: 12


    1 lb. Ground Turkey
    1 can Refried Beans
    1 can Enchilada Sauce
    12 Tortilla Shells
    4 oz. Shredded Cheddar Cheese


1. Brown the meat and drain the fat.

2. After the meat is browned, add refried beans to the meat and heat through.

3. Spray 9 x 13 baking dish with cooking spray.

4. Roll 1/12 of the meat mixture in each tortilla. No need to tuck the ends in - just leave them open.

5. Place the enchiladas in the baking dish and pour the rest of the enchilada sauce over them.

6. Sprinkle cheese on top and place in the oven until the cheese melts.

DANGER: These are really good, and you really only need one, so be sure to pack the unneeded enchiladas in containers for a future meal as you dish up the plates.
