    1.5 cups Whole Wheat Flour
    1.25 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp cinnamon
    1/8 tsp salt
    1/3 cup liquid egg whites (or 2 egg whites)
    4 medium bananas, mashed
    3/4 cup Splenda
    1/4 cup unsweetened applesauce


In a medium mixing bowl stir together flout, baking powder, baking soda cinnamon and salt

In a large mixing bowl use a hand mixer to beat egg whites to soft peaks. Add in banana, Splenda and applesauce. Beat again until mixture is combined and slightly frothy. Stir in flour mixture with spoon just until moistened.

Spray 18 muffin cups (or use cupcake liners) with cooking spray. Spread batter evenly into the cups. (I used the large Pampered Chef scoop, but a large ice cream scoop would work just as well.)

Bake at 350 for 30-40 minutes, or until a toothpick inserted in the center comes out clean.
