Number of Servings: 24


    2 cups flour
    2 tsp baking powder
    tsp salt
    2 tsp baking soda
    2 tsp cinnamon
    2/3 cup brown sugar
    cup sugar
    4 eggs
    cup vegetable oil
    cup orange marmalade
    4 cups grated carrot
    1 cup toasted walnuts
    cup orange juice


Pre-heat oven to 350 F (180 C). Lightly grease and flour two 9 cake pans.

Mix dry ingredients. Beat eggs, oil, sugars, marmelade and juice. Mix in dry ingredients. Fold in carrots and nuts. Pour into cake pans. Bake about 40 minutes. Cool 15 mins. Before removing from pans.

Serving Size: Makes One 9" 2 layer cake - 24 servings
