    1 T evoo
    4 oz diced onion
    8 oz sliced portobello
    8 oz whole white mushrooms, quartered
    4 oz sm diced carrot
    16 oz chicken broth
    16 oz beef broth
    2 oz dry Sherry

    1 tsp kosher salt
    1/2 tsp freshly ground black pepper


Heat oil over medium high heat.
Add onion and carrots,
Cook to soften. About 5 minutes.
Add mushrooms and broth.
Bring to a boil then reduce heat to medium low.
Allow to simmer for 15 minutes.
Mushrooms will reduce in size as they release their water.
Add sherry.
You may need to simmer an additional 10 minutes to allow soup to reduce and to concentrate the flavors,
Taste test and adjust seasonings as needed.
