    4 oz. lasagne noodles (no boil type)
    12 oz. Ricotta cheese ( part skim )
    12 oz. shredded mozarella (part skim )
    1/2 c chopped onion
    1 1/2 c chopped cauliflower
    1 c chopped broccoli
    1/2 c chopped red bell pepper
    1 c chopped mushroom
    3 oz baby spinich
    Jarred spaghetti sauce (meatless)
    1 egg


Chop all veggies and mix together in bowl. Mix egg into Ricotta cheese. Pour enough sauce into the bottom of a 9 x 13 pan to coat. Put 3 lasagne noodle on top. Spread veggie mixture on top. Add 1/2 of the Ricotta cheese mixture on top. Sprinkle with 1/3 of mozarella. Add another layer of noodles. Continue "building" lasagne until all ingredients are gone, ending with sauce on top and reserving 1/2 c mozarella. Bake at 350 for 1 hour. Add remaining mozarella cheese and bake for an additional 10 minutes.

  • I've been searching for a good veggie lasagne recipe and this one sounds pretty good. I plan on making it soon, might add some frozen peas and carrots to it also. I'll rate it after I make it! - 6/6/12
