Ingredients

    1 1/2 C Wheat Flour
    3/4 C Flax Seed Meal
    1 C Brown Sugar
    1 tsp Baking Powder
    1 tsp Baking Soda
    1/4 tsp Salt
    2 tsp Cinnamon
    2 tsp Pumpkin Pie Spice
    1 tsp Ground Ginger
    2 Med Apples, shredded
    3/4 C Nonfat Milk
    1 Egg
    2 Egg whites
    1 tsp Vanilla Extract
    1/2 C Bluberries

Directions

Preheat oven to 400 degrees. Mix all dry ingredients together, except blueberries. Combine the eggs, sugar, milk and vanilla. Beat for 30 seconds. Pour liquid ingredients into dry and stir together with as few strokes as possible. Fold in blueberries. Fill each muffin tin 3/4 of the way. Bake at 400 degrees for 15-20 minutes
