    4 boneless skinless chicken breasts
    1 clove garlic, minced
    1/3 cup fat free feta, crumbled
    1 package frozen spinach, thawed
    1/2 cup minced onion
    2 tbsp. olive oil
    1 tsp. salt
    1 tsp. black pepper
    Non-stick cooking spray


Combine spinach, feta, salt & pepper, garlic, onion, olive oil in a bowl.
Cut chicken down center to create pocket. DO NOT CUT ALL THE WAY THROUGH.
Stuff chicken with spinach mixture.
Spray toothpicks with non-stick spray. This will allow them to be more easily removed after cooking.
Use toothpicks to secure spinach mixture inside of chicken.
Place chicken in glass baking dish.
Bake for 45-60 depending of the size of the chicken breasts.
