    Cucumber (peeled), 1 medium
    Peppers, sweet, red, raw, sliced, 1 cup
    Zucchini, 1 cup, sliced
    Onions, raw, 1 cup, chopped
    balsamic vinegar, 8 tablespoon
    Olive Oil, 1 1tsp
    *Splenda, 4 tsp
    Salt & Pepper to taste


Combine venegar, oil, and sweetiner with 1 cup of water. Place all veggies in a separate dish. Cover veggies with vinegar marinade and stir. Coever dish and refrigerate for at least 1 day.

  • I love this recipe. A great update to the classic cucumbers and onions in vinegar. The color isn't great with balsamic but the taste more than makes up for it. - 6/14/11
