Ingredients

    * *Pasta, whole wheat elbows, 13.5 oz (remove)
    * Cauliflower, raw, 1 head, large (6-7" dia) (remove)
    * Milk, nonfat, 2.5 cup (remove)
    * *Wheat flour, white, all-purpose, unenriched, .185 cup (remove)
    * Cheddar Cheese, 1 cup, shredded (remove)
    * Parmesan Cheese, grated, .5 cup (remove)
    * Cheddar or Colby Cheese, Low Fat, 1 cup, shredded (remove)
    * Butter, salted, 2 tbsp (remove)
    * Onions, raw, 1 small (remove)
    * Garlic, 4 clove (remove)

Directions

boil pasta, while pasta is boiling, in separate pot steam the cauliflower until tender. When cauliflower is done, remove from pan and set aside. In same pan saute onion and garlic until tender, then add the flour and cook for 1 minute. Slowly add the flour while whisking to combine. When mixture has thickened, add 2/3rds of the cheese. Then add the drained pasta and cauliflower to cheese mixture. Sprinkle remaining cheese mixture on top of the mac n cheese, and bake in 400 degree oven for about 20 minutes, or until cheese is melted and golden brown. YUM!!
