    1 red potato
    2 cups squash (peeled)
    1 shallot
    1 scallion
    1/2 zucchini
    1/2 cup lowfat ricotta cheese
    1/4 cup parmesian/romano cheese


boil potatoes and squash until tender
Mince onions, zucchini and garlic. Saute in olive oil
Drain potatoes,
Mix in cheese, sage and sauted mixture.
Salt to taste. Feel free to throw in some splenda too, depending on the flavor you're going for.
