Ingredients

    6 Eggs
    3 Tbsp. Heavy Cream
    5 Tbsp. Butter
    0.5 Large Onion, Chopped
    4 Oz. Lean Ground Beef
    3 Tbsp. Salsa
    4 Tbsp. Enchiladas Sauce
    1 Cup Shredded Colby Jack Cheese Blend
    3 Low Carb Tortillas, 10 Net Carbs Each
    6 Tbsp. Sour Cream

Directions

Brown ground beef. Drain off the fat then add in the onion and butter. Saute until onions are soft and tender. Whisk the eggs and cream together. Pour into the onion and beef and cook together until the eggs are cooked through.
Pour everything into a clean bowl. In a deep casserole dish, pour 2 tbsp. enchiladas sauce in the bottom. Spray with non stick spray. Fill the low carb tortillas with the egg mixture and set i nthe bottom of the dish. Top with the rest of the enchiladas sauce, salsa, and cheese. Bake in the oven until cheese is hot and bubbly. Top with sour cream.
