Ingredients

2 Tbsp Smart Balance Spread
3 small sweet potatoes, peeled and chopped
3 large carrots, peeled and chopped
1 apple, peeled, cored and chopped
1 onion, chopped
1/2 cup red lentils
1/2 tsp minced fresh ginger
1/2 tsp ground black pepper
1/2 tsp ground cumin
1/2 tsp chili powder
1/2 tsp paprika
4 cups chicken or vegetable broth
Directions
Melt the Smart Balance Spread in a heavy bottomed large pot over medium heat. Add the chopped raw sweet potatoes, carrots, apple, and onion in the pot. Stir and cook until the onions are translucent. About 10 minutes
Stir in the lentils, broth, and spices into the vegetable mixture. Bring to a boil, then reduce heat to a low simmer. Cover and cook until the lentils and vegetables are soft, about 30 minutes. Add water or more broth if you like a thinner soup.
You can serve with plain yogurt for garnish. * Not included in nutrition data.
