    1 Yam, peeled and cut in bite size pieces
    1 Sweet potato, peeled and cut in bite size pieces
    1 Fennel bulb, cut in bite size pieces
    Garlic, minced
    1.5 T. Extra Virgin Olive Oil, Kirkland
    1 T. Balsamic Vinegar
    1/2 t. Kosher salt
    1/2 T. dried oregano
    Fresh ground pepper


Coat vegetables with olive oil and balsamic vinegar. Sprinkle with kosher salt and oregano. Finish with fresh ground pepper. Bake in 400 degree oven for 40 minutes. Toss and return to oven for 20 more minutes.
