Ingredients

1 cup light mayo or vegan mayo
1 TBS curry powder
1/4 medium head of green cabbage(shredded)
1/4 medium head of napa cabbage(shredded)
1 medium zucchini or other summer squash, shredded or grated
1 large carrot, grated
2 stalkds celery, finely chopped
2 green onions, sliced thinly
2 green or Granny Smith apples, small cubes
1 cup roasted peanuts, finely chopped
Directions
Mix mayo and curry power in LARGE bowl until well-blended.
Add all remaining ingredients EXCEPT PEANUTS.
Toss and toss to coat all with may mixture.
(I usually do the coating in two batches).
Cover and chill.
Add peanuts just before serving.
This recipe makes 16 1/2 cup servings.
