Packed with protein AND good for your heart! :) I found this recipe a long time ago, but do not remember where, so I can't give proper credit... Packed with protein AND good for your heart! :) I found this recipe a long time ago, but do not remember where, so I can't give proper credit...
Number of Servings: 1

1/3 cup regular oats (not instant)
    2 egg whites, large
    1 tbsp nonfat cottage cheese
    2 tbsp cooked pumpkin
    1 tsp pumpkin pie spice
    2 packets Splenda (optional)

Mix ingredients together & cook on a teflon pan to eliminate the need for any butter or oil. Otherwise, use a spray oil for the pan.

Topping ideas: chopped nuts, banana slices, sugar free syrup, pumpkin butter, strawberry slices, applesauce, peanut butter... try my "Heavenly Fruit Dip" recipe!

Makes 1 large pancake or 2-3 small pancakes - depends on how you pour the batter!

  • Wasn't impressed with this recipe. Should have indicated this needs to be run through a Blender or food processor. I didn't use those and what a mess I had. It stuck in my pan, even though I melted a teaspoon of butter before dropping the batter in and whole thing stuck. Not sure I'll make again - 1/31/15

  • You HAVE TO blend the ingredients with a blender/food processor. I mixed and plopped the oatmeal balls in the pan with pam and what a mess! The batter was more like grainy stuffing! And even with pam... they stuck to the pan! I highly suggest the splenda also! - 11/1/11

  • These were just ok. I was really excited about them. I mixed everything up in the blender first so the texture was okay but the flavor was bland. I don't like spicy pumpkin bread but this needed a little something extra. - 8/19/11

  • Used a food processor to mix all the ingredients smooth and added 1/2 a small banana to the mixture! VERY GOOD! :) - 10/23/10

  • Haven't tried it, but it has me thinking about maybe making a protein oatmeal with pumpkin in it. Sounds like a good idea. Thanks! - 3/3/10

  • Really like these! I made them last night and ate them this morning! I doubled the batch and forgot to double the sweetener (I used stevia) so they were a little less sweet, I put PB on top cuz I didn't have applesauce, I think it would be better with applesauce! Very Yummy and filling! - 4/7/09

  • These were good! The recipe doesn't make it clear if the oatmeal is cooked or not... if it's dry, you have to blend the ingredients to get a batter-like consistency. - 2/10/09

  • Yummy! I just made these (eating while I type), but I didn't have any pumpkin so I used applesauce instead. They turned out great! I pureed a cup of strawberries and heated them through to make a strawberry 'syrup' to top them with.
Thanks for the great and VERY healthy recipe!

  • I too found this on Hungry Girl. I made them this morning and I'm not sure what I did wrong but mine were very soggy....the recipe I used also called for banana. I am going to try them in the waffle iron next time. They are healthy and tasty though! - 11/20/08

  • Not super flavorful on their own, but what I can taste is pleasant. What really makes them sing is to spread some homemade apple butter on top.... yum! - 11/2/07
