A great tasting meatless chili A great tasting meatless chili
Number of Servings: 8


    1 cup defrosted frozen corn
    1 roasted acorn squash
    2 tbl garlic
    1/2 jalapeno pepper with seeds for kick
    1 tbl cumin
    1 tsp cinnamon
    1 tsp coriander
    1 tsp paprika
    1/2 tsp chili powder
    1 tbl cocoa powder
    1/4 cayenne
    salt and pepper to taste
    1 15 oz can black beans drained and rinsed
    1 15 oz can kidney beans drained and rinsed
    1 15 oz your choice of canned tomatoes
    2 cups chicken or vegetable stock
    zest and juice of one lime


Cook the acorn squash till tender 30-60 min
saute onion, garlic, jalalpeno and corn till tender
add spices, cocoa and stir
Add beans, tomatoes and stock and simmer 20-25 min
scoop flesh of squash into chili and simmer for 10 min or so.
break up the squash as you stir.
just before serving add zest and lime juice
