I adapted this recipe from one I found online. I served it on the green leaves of the bok choy for company before Caribbean Pork Stew with Pineapple. Both were a big hit! Ingredients

    Bok Choy, About 4 Cups, shredded (about 1 1/2 heads)
    Peppers, sweet, red, fresh, 1 medium, sliced thinly
    Red Onions, raw, .1/2 large, sliced thinly
    Carrots, raw, 2 medium, shredded
    Mangos, 1, peeled, seeded and diced
    Cilantro, about 1/4 Cup, chopped
    Greek Yogurt, Plain, 1/3 Cup
    Fat Free Mayonnaise , 2 tbsp
    Yellow Mustard,1 Tbsp
    Cider Vinegar, 3 tbsp
    *Guava Nectar, .25 cup
    Hot Pepper Sauce, 2 tsp
    Salt and Pepper to taste

Directions

Toss the cabbage, red bell pepper, red onion, carrots, mango and cilantro together in a large bowl. Whisk together the yogurt, Mayo, mustard, vinegar, nectar, salt, pepper and hot sauce and pour over the cabbage mixture and toss to coat. Allow the slaw to cool in the refrigerator for at least an hour before serving.

Serving Size: About 1/2 cup
