Ingredients

    1 T. olive oil
    1 14oz block firm tofu
    1 lg onion, chopped
    2 C. fresh mushrooms
    1 C mushroom soup, or more
    8 oz light sour cream

Directions

Brown onions in oit, add muskrooms and cook till tender, stirring as needed. Remove from pan.Cube tofu, small cubes maybe 1/2", Saute tofu in Olive oil. Stir in soup and heat.
Add sour cream and heat, DO NOT boil, if you do, it will curdle.
Serve over egg noodles
