    3 chayote, chopped and cooked until tender (in little water)
    1 medium onion
    1 cup nonfat milk
    1 Tablespoon stick margarine
    1/2 cup mozzarella cheese
    3 eggs, separated
    1 Tablespoon flour


Sauté onions in margarine. Add egg yolks, milk, cheese and flour. Cook until thickened. Add chayote and salt. Fold in beaten egg whites. Bake at 350 degrees for 30 minutes in greased and floured dish (pyrex). It should be brown and puffy.

Serving Size: Makes approximately 16 pieces
