Introduction

Just a mix of some extras I had. Turned out pretty good, I think. My measurements aren't exact since I was experimenting.

*When I get my tomatoes, I usually chop them up and keep them in the refrigerator in a little red wine vinegar and onions. This keeps them lasting longer and adds a bit to a kick in recipes.

Ingredients

    Rontini
    Garlic
    Chicken
    Butter or Buttery Spread
    Lemon Peel Seasoning
    Lemon Pepper Seasoning
    Lemon Juice
    Olive Oil
    Fresh Spinach
    Fresh Basil
    Artichoke Hearts
    Feta Cheese
    Parmesan Cheese
    Tomato*

Directions

Prep pasta per package directions.
Saute garlic in butter spread. Add chicken (diced). When white on both sides, add mushroom, lemon juice, lemon pepper and peal.
Mix spinach, artichokes, onion and basil in a separate bowl. Coat mixture in olive oil.
When mushrooms start to brown and chicken looks nearly cooked, mix in spinach mix. Heat until leaves are beginning to wilt. Add tomatoes, feta and parmesan.
When cheese is melted, mix with pasta and serve!
