Introduction

Ingredients

    13 ounces shell pasta
    2 cups diced ham
    4 ounces Swiss sheese, shredded, divided
    1 cup skim milk
    1 cup half-and-half
    1 cup light sour cream
    4 whole green onions, chopped
    1 whole roasted red pepper, diced
    3 garlic cloves, minced
    2 T flour
    2 T butter
    1 t salt
    1/2 t pepper

Directions

Cook pasta in boiling water until just starts to get tender (about half normal cooking time). Drain.

Melt butter in Dutch oven. Add green onion, garlic, and red pepper. Cook for 2 minutes. Add flour. Stir well and cook for 2-3 more minutes. Add milk, half-and-half, and half the shredded cheese. Cook, stirring constantly over medium high heat until sauce becomes thick and bubbly.

Remove from heat. Stir in sour cream until well combined. Add ham and pasta, stirring until pasta is well coated with sauce. Pour into oven-safe baking dish. Sprinkle with remaining cheese. Bake at 350 degrees for 25-30 minutes or until cheese starts to brown.
