This deliciously light soup is filling and flavorful. This deliciously light soup is filling and flavorful.
Number of Servings: 10


    White Beans (cannelini) 1 15 oz. cans
    Swanson Chicken Broth 99% Fat Free 3 16 oz. cans
    Spinach, frozen, 1 package (10 oz)
    Leeks, 4 leek, chopped and washed well
    Garlic, 5 cloves minced
    Pepper, red or cayenne, 2 tbsp
    Olive Oil, 4 tbsp
    Cumin seed, 2 tbsp, ground


Saute leeks in olive oil over medium-high heat. When they are soft, add garlic and cumin and saute until fragrant and garlic slightly golden. Add chicken broth, spinach, beans, and hot pepper flakes. Simmer on low for 15-30 minutes and serve hot.
