    1/2 c. plus 2 TBS oats
    1 c. whole wheat flour
    2 TBS ground flaxseed
    1/3 c. oat bran
    1/2 tsp. salt
    1/2 tsp. baking soda
    1 tsp. baking powder
    2 tsp. cinnamon
    1/4 c. brown sugar
    1 egg
    2 TBS canola oil
    1 1/2 c. skim milk
    1 tsp. vanilla extract
    1.5 cups blueberries, frozen or fresh


In a bowl mix together egg, oil, milk, and vanilla extract. Add oat bran and set aside. In a separate bowl mix together all remaining ingredients except for blueberries. Pour wet mixture into dry and stir just until moistened. Fold in blueberries. Heat skillet and spray with cooking spray. Pour batter onto skillet using 1/3 cup for each pancake. Once bubbling, flip and cook until golden brown.
